What you need:

  • 4 Tbsp Flax Meal
  • 1/2 Cup Soy Flour + 2Tbsp
  • *1/2 Cup Unflavored Soy Protein
  • *1/2 Cup Almond Flour
  • *Or you can use 1.5 Cups soy flour instead if you wish
  • 1/2 Cup grated zucchini
  • 1/2 Cup Almond Milk
  • 1/4 Cup Heavy Cream
  • 1/2 Cup Club Soda
  • 1/3 Cup Stevia or other natural sugar substitute
  • 1.5 tsp Baking Powder (**to make a gluten free baking powder see below)
  • Gluten-free baking powder
  • 1/4 cup bicarbonate soda (baking soda)
  • 1/2 cup cream of tartar

What you do:

  1. Preheat oven @ 375 degrees.
  2. Mix flax meal & 2 Tbsp soy flour and sprinkle inside nonstick muffin trays (basically coat like you would w/ flour)
  3. Mix all of the ingredients together and fill muffin cups 2/3 of the way. Bake 20-25 mins. Until you can stick a fork in them and it comes out clean. ENJOY!

When buying soy flour, look for debittered soya flour. It has a milder flavor. Plain full fat soy flour has a noticeable stronger flavor
