What you need:
- 4 Tbsp Flax Meal
- 1/2 Cup Soy Flour + 2Tbsp
- *1/2 Cup Unflavored Soy Protein
- *1/2 Cup Almond Flour
- *Or you can use 1.5 Cups soy flour instead if you wish
- 1/2 Cup grated zucchini
- 1/2 Cup Almond Milk
- 1/4 Cup Heavy Cream
- 1/2 Cup Club Soda
- 1/3 Cup Stevia or other natural sugar substitute
- 1.5 tsp Baking Powder (**to make a gluten free baking powder see below)
- Gluten-free baking powder
- 1/4 cup bicarbonate soda (baking soda)
- 1/2 cup cream of tartar
What you do:
- Preheat oven @ 375 degrees.
- Mix flax meal & 2 Tbsp soy flour and sprinkle inside nonstick muffin trays (basically coat like you would w/ flour)
- Mix all of the ingredients together and fill muffin cups 2/3 of the way. Bake 20-25 mins. Until you can stick a fork in them and it comes out clean. ENJOY!
When buying soy flour, look for debittered soya flour. It has a milder flavor. Plain full fat soy flour has a noticeable stronger flavor
